Wood Roasted Regal Salmon with Fennel

Ingredients

  • 400g Regal Natural Wood Roasted Salmon
  • 2 large fennel bulbs
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • freshly ground black pepper
  • 1 small Lebanese cucumber, peeled and fi nely chopped
  • 1 tablespoon pickled pink ginger, finely chopped
  • 2 spring onions, chopped
  • 2 tablespoons chopped coriander

Method

  1. Preheat the oven to 180˚C.
  2. Trim the fennel and cut each bulb into 8 wedges. Place the fennel in an oven dish lined with baking paper. Drizzle with olive oil and season with the salt and pepper. Bake in the preheated oven for 30 to 40 minutes, or until the fennel is soft. Turn occasionally.
  3. Remove the fennel from the oven and cool. Once the fennel is cool, chop finely and place in a bowl with the cucumber, pink ginger, spring onions and coriander.
  4. Remove the skin from the salmon and fl ake the salmon into chunks.
  5. Spoon the salsa onto serving plates. Top with the salmon and garnish.
