Thai Regal Salmon Soup

Ingredients

  • 215 grams Regal Salmon fresh fillets
  • 3 cups chicken stock
  • 1/2 teaspoon finely chopped lemon grass
  • 1 tablespoon finely chopped fresh ginger
  • 1 tablespoons lemon juice
  • 1/2 to 1 teaspoon chilli
  • 1 tablespoon Thai fish sauce
  • 1 tablespoon fresh coriander leaves

Method

  1. Bring chicken stock, lemon grass, ginger, lemon juice, chilli, coriander leaves and fish sauce to the boil.
  2. Simmer for 2 minutes.
  3. Cut salmon flesh into 0.5cm strips.
  4. Add salmon and cook for 2 minutesor until salmon is just cooked.
  5. Garnish with coriander leaves and serve immediately.
