Thai Regal Salmon Filo Parcels

- 1 teaspoon grated fresh ginger
- 1 grated lime zest
- juice of 1 lime
- 1 clove garlic crushed
- 1 tablespoon fresh coriander chopped
- 1 spring onion finely sliced
- 25 grams butter
- 4 sheets filo pastry
- 200 grams Regal Wood Roasted Salmon
- salt
- Pre heat oven to 190C.
- In a small bowl mix together ginger, lime zest, garlic, coriander
- Stir in lime juice.
- Melt butter and brush 1 sheet of filo, lay another on top and brush the surface with butter.
- Position half the salmon near to one end of the filo, season with salt and pepper, then spread 1/2 the lime and herb mixture on top.
- Fold short end over salmon then fold long sides inwards, fold over twice more and trim any surplus.
- Place on a baking tray and bake for 10 - 15 minutes until golden brown. Garnish with sprigs of coriander and lime wedges.
Serving suggestion:
- Serve with an Asian dipping sauce and bok choy sauteed in oyster sauce.
