Sumac Sesame Grilled Regal Salmon with Creamed Corn, Brocollini and Piko Piko

Ingredients

  • Salmon Fillet (180g x 2)
  • 1 tsp Sumac
  • 1 tsp Sesame Seeds
  • 150g Corn Kernels
  • 100ml Fresh Cream
  • 1 tsp Crushed Garlic
  • 1/2 Red Onion
  • 1 Tbsp Brown Sugar
  • 2 Tbsp Olive Oil
  • 4 sticks Brocollini
  • 10g Butter
  • 6 Piko Piko or substitute with Asparagus
  • 200ml White Wine
  • 20g Lemon Grass
  • 1 tsp Wasabi Paste
  • 1/2 tsp Lemon Juice
  • Fresh Dill for Garnish
  • Salt and Pepper

Method

Salmon

  1. Cut the salmon fillet in half and marinate with sumac, sesame seeds and olive oil.
  2. Preheat a grill or pan and sear for 1 minute on each side.

Creamed Corn

  1. In a pot add olive oil and garlic, cook for 1 minute and add the corn kernels.
  2. Saute for 2 minutes and add the white wine. Reduce for 1 minute.
  3. Add the fresh cream and reduce for 5 minutes, season with salt and pepper and blend to a smooth texture.

Caramelised Onion

  1. In a pan add butter and sliced onion and cook for 5 minutes.
  2. Add the brown sugar and caramelise until golden brown.

Wasabi Froth

  1. In a pot add the white wine and lemon grass and reduce by half.
  2. Add the cream and reduce by half again.
  3. Add the wasabi paste and lemon juice, froth with a coffee frother.

Piko Piko and Brocollini
1. Blanch in boiling salted water for 1 minute and add butter and seasoning.

To Serve

  1. Spoon the creamed corn on a plate and place the brocollini and piko piko.
  2. Place the grilled salmon and caramelised onion on top.
  3. Spoon the wasabi froth and garnish with fresh dill tip.
