Regal Wood Roasted Salmon Salad

- Olive oil for spraying or brushing
- 2 Aubergines, thinly sliced
- Sea salt and freshly ground pepper
- 6 Tomatoes, quartered
- 100 gms feta cheese
- 200g Regal Wood Roasted Salmon Mixed Peppers and Spices
- 1 1/2 C Mint leaves
- 1/2C Black kalamata olives stoned
- 1/2 red onion, thinly sliced
- 1/4 C extra virgin olive oil
- 3-4 tspns lemon juice
- sea salt and freshly ground black pepper
- Spray or brush a couple of baking trays with olive oil. Place the aubergine slices on the trays in rows, spray or bursh them with oil and season. Bake in an oven pre-heated to 200 oC for 15 minutes or until golden brown.
- Turn and cook for a further 10 minutes. Layer the aubergine, tomoates, and Regal Mixed Peppers & Spices in a serving dish.
- Crumble the feta over, then sprinkle the mint, olives and onion on top. To make the dressing, mix together the olive oil, lemon juice and season. Drizzle the dressing over the salad and gently combine.
- Serve with some crusty bread on the side.
