Regal Wood Roasted Salmon Nicoise

Ingredients

  • 250g baby potatoes, scrubbed and cut in half
  • 150g green beans
  • 4 eggs
  • 3 tomatoes, cut into wedges
  • 200g Regal Wood Roasted Salmon, flaked
  • 1/2 cup black olives
  • Italian parsley leaves
  • 1/2 cup vinaigrette dressing

Method

  1. Boil the potatoes until tender, then drain and allow to cool.  While the potatoes are cooking, blanch the beans in boiling water for 2 minutes. Drain then plunge into cold water.
  2. Hard boil the eggs, then peel and slice into quarters. Place the potatoes, beans, eggs and tomatoes in a salad bowl. Add the flaked salmon and olives.
  3. Drizzle with the dressing then sprinkle over the Italian parsley leaves.  Serve immediately.
  4. To prepare the dressing, combine all ingredients.
