Regal Wood Roasted Salmon Nicoise Rolls

Ingredients

  • 4 hard boiled eggs quartered
  • 1 cup cherry tomatoes halved
  • 3 cups new potatoes cooked and quartered
  • 100 grams green beans blanched
  • 1/2 cup caperberries
  • 1/2 cup fresh basil leaves shredded
  • 1/2 cup black olives
  • 1 200 gram pack Regal Wood Roasted Salmon
  • 2 sticks french bread cut into eight portions

Dressing

  • 1 egg
  • 1 clove garlic crushed
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 4 anchovy fillets mashed
  • 1/2 cup olive oil
  • 2 tablespoons cream
  • ground black pepper

Method

  1. Place all the salad ingredients in a bowl and gently toss through the dressing.
  2. Split the french sticks along the top and divide the salad evenly between the rolls.

Dressing:

  1. Place the egg, garlic, lemon juice, dijon mustard and anchovy fillets in a food processor.
  2. With the motor running add the oil drop by drop until the dressing thickens. Continue adding the oil slowly
  3. Stir in the cream.
