Ingredients (Serves: 4)
250g crème fraiche or sour cream
1/4 cup chopped chives
1/4 cup chopped parsley
1/4 cup lemon juice
2 teaspoons finely grated lemon rind
400g spaghetti
200g Regal Wood Roasted Salmon Mixed Peppers and Spices, flaked
Method
1. In a small bowl, mix together the crème fraiche or sour cream, chives, parsley, lemon juice and lemon rind. Set aside.
2. Cook the pasta in a large pot of boiling salted water, following the packet directions. Drain well, return the pasta to the pot, stir in the creamy herb mixture and the salmon.
3. Alternatively, form the drained pasta into coils, spoon the sauce into the middle and top with the salmon and lemon zest.
4. Serve immediately.
