Regal Smoked Salmon Ravioli with Lemon Oil

Ingredients
300g bakers flour (hard)
3 Free range eggs
1 tablespoon olive oil
1 teaspoon sea salt
200g Regal Cold Smoked Sliced Salmon
200g quark or ricotta
1 lemon squeezed
3 tablespoons chopped parsley
Salt and pepper 
Lemon oil and chopped chives to serve  

Method
To make the pasta:

1. Can be either made by hand or in a food processor. Mix all ingredients and knead for 4 minutes until smooth. Rest for 20 minutes.
2. Roll our in a pasta machine as thin as possible as it will double in thickness when cooked.

To make the filling:
1. Roughly chop smoked salmon, mix all ingredients and then using a piping bag or teaspoon place onto pasta. Use a thinned out egg yolk to stick pasta sheets together and shape into ravioli.
2. Cook for 2 minutes in boiling salted water and then toss with lemon oil and finely chopped chives.
3. You can flavour colour the pasta using squid ink, tomato paste, saffron or spinach. A pasta machine is not necessary to roll pasta out but it will make the job easier.
