Regal Smoked Salmon Frittata

Ingredients

Method

  1. Pre-heat oven to 180C.
  2. Peel potatoes and carrot then coarsely grate. De-seed capsicum and cut into strips. Trim spring onions and slice finely. Mix vegetables together.
  3. Lightly beat eggs and mix into vegetables.
  4. Pour 1/2 the mixture into a greased dish, flake wood roasted salmon on top and cover with remaining vegetable and egg mixture.
  5. Mix parmesan and tasty cheese together and sprinkle over the top. Bake for 45 minutes.
  6. Serve with mesclun salad greens and cherry tomatoes.
