Regal Smoked Salmon Ciabatta

Ingredients

  • 1 large ciabatta loaf
  • olive oil spray
  • 1/2 telegraph cucumber
  • 150 grams cows feta
  • 6 grilled artichoke hearts sliced
  • 200 gram pack Regal Smoked Salmon Slices
  • ground black pepper

Black Olive Dressing

  • 1/3 cup pitted black olives
  • 2 x 1/2 tablespoons lemon juice
  • 1/2 cup olive oil
  • rock salt and black pepper to taste

Method

  1. To make the black olive dressing process all the ingredients to a paste in a food processor.
  2. Cut the ciabatta into 18 - 20 slices. Spray both sides with olive oil and lightly grill until golden but still soft.
  3. Slice the cucumber thinly and lay several pieces on each slice of bread.
  4. Crumble the feta into a bowl. Thinly slice the grilled artichokes and combine with the feta. Spoon a little on top of the cucumber.
  5. Finish the top with slices of Regal Smoked Salmon and a teaspoon of black olive dressing.
