Regal Smoked Salmon Cannelloni

Ingredients
200 gram packet Regal Wood Roasted Salmon
3 medium tomatoes
2 roasted red peppers
200 gram pot ricotta cheese
1 egg
250 gram packet fresh lasagne sheets

Sauce
1 1/2 cups milk
2 bay leaves
10 black pepper corns
1 onion
25 grams soft butter
2 tablespoons flour

Method
1. Remove salmon from skin and chop roughly.
2. Cut tomatoes into 1cm cubes, cut roasted red peppers finely.
3. Mix salmon, tomatoes, peppers, ricotta and egg together.
4. Cut lasagne sheets into 17 cm pieces.
5. Fill sheets with salmon mixture, down centre of sheets and roll around salmon to form a tube.
6. Place in a greased ovenproof dish and pour over sauce.
7. Sprinkle with cheese and bake at 180 degrees C for 40 minutes.

Sauce
1. Place milk, bay leaves, peppercorns and peeled onion in a saucepan and bring to the boil. Remove bay leaves, onion and peppercorns with slotted spoon.
2. Mix butter and flour together and whisk into hot milk. Bring to the boil whisking until thick
