Regal Smoked Salmon, Avocado and Egg Stack

Ingredients

Crepes

  • 1 cup plain flour
  • 2 eggs
  • 1 cup milk
  • salt
  • butter for cooking

Egg Filling

  • 3 hard boiled eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped chives

Smoked Salmon Filling

  • 200g Regal Smoked Salmon
  • 2 tablespoons sour cream
  • 1 small onion finely chopped
  • 1 1/2 teaspoons capers finely chopped

Avocado Filling

  • 1 avocado thinly sliced
  • 1 teaspoon lemon juice

Method

Fillings

  1. Egg Filling - mash the eggs finely and mix in the mayonnasie and chives.
  2. Smoked Salmon Filling - combine the sour cream, chopped onions and capers.
  3. Avocado Filling - Drizzle the lemon juice over the sliced avocado.

To assemble the stack

  1. Place 1 crepe ona flat surface. Spread over the egg mixture. Place another crepe on top. Spread with the sour cream and caper mixture. Lay 2 slices of smoked salmon on top, followed by another crepe. Lay the sliced avocado on top and finish with another crepe. Serve with sour cream and dill sauce.

Sour Cream and Dill Sauce

Mix the following ingredients together and refigerate until ready to serve:

  • 2 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon horseradish cream
  • 1 teaspoon lemon juice
  • 1 tablespoon chopped dill
  • salt and pepper
