Regal Smoked Salmon and Egg Pie

Ingredients

  • 2 sheets pre-rolled flaky pastry
  • 200 grams Regal Wood Roasted Salmon
  • 4 eggs
  • 1 tablespoon capers
  • 1 tablespoon chopped parsley
  • salt
  • pepper
  • milk
  • 2 tablespoons sesame seeds

Method

  1. Use one pastry sheet to line the base and sides of a 20cm square shallow tin.
  2. Remove skin from salmon and break salmon into chunks. Place over pastry shell.
  3. Break eggs into pastry shell, breaking yolks with a fork. Sprinkle capers and parsley over. Season with salt and pepper.
  4. Cover with second sheet of pastry. Seal edges. Brush with milk.
  5. Make a hole in the centre. Sprinkle with sesame seeds. Bake at 200C for 30 to 35 minutes or until pastry is golden and cooked.
