Regal Salmon with Mexican Corn Fritters

Ingredients

  • 1 400 gram can corn kernels drained
  • 1 cup self-raising flour
  • 1 teaspoon baking powder
  • 3 eggs
  • 1/4 cup flat leafed parsley chopped
  • 1/4 cup milk
  • pinch nutmeg
  • salt to taste
  • 1 100 gram pack Regal Cold Smoked Salmon
  • 1/2 cup horseradish cream
  • handful of rocket leaves

Method

  1. Place the corn, flour, baking powder, eggs, parsley and seasonings in a bowl and mix to a batter.
  2. Cook dessertspoonfuls of mixture like pikelets in a hot greased fry pan for approximately 4 minutes each side until golden. Keep warm.
  3. To serve place a corn fritter on a serving plate and top with rocket, Regal Cold Smoked Salmon, and a dollop of horseradish cream. Top with a second corn fritter.
