Ingredients (Serves: 4)
1 tablespoon brown sugar
1 1/2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon soy sauce
1 fresh Regal Salmon Fillet cut into 4
4 shittake mushrooms sliced
1/2 tablespoon olive oil
2 bok choy (ends removed)
1/2 cup oyster sauce
1/2 cup vegetable stock
Method
1. Combine the brown sugar, olive oil, lemon juice and soy sauce in a shallow dish large enough to just contain the Regal Salmon Fillets.
2. Marinate for 1 hour spooning the marinade over the fillets now and again.
3. To cook, remove the fillets from the marinade and place onto a hot oiled grill or barbeque for approximately 3-4 minutes each side (or cooked to your taste).
4. To cook the vegetables, place the mushrooms and oil in a medium hot pan and cook two minutes. Pour in the oyster sauce and vegetable stock and stir together.
5. When the sauce boils drop in the bok choy leaves and cook until just wilted.
6. Serve underneath or alongside the Regal Salmon Fillets.
