Regal Salmon with Bok Choy In Oyster Sauce
- 1 tablespoon brown sugar
- 1 1/2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon soy sauce
- 1 fresh Regal Salmon Fillet cut into 4
- 4 shittake mushrooms sliced
- 1/2 tablespoon olive oil
- 2 bok choy (ends removed)
- 1/2 cup oyster sauce
- 1/2 cup vegetable stock
- Combine the brown sugar, olive oil, lemon juice and soy sauce in a shallow dish large enough to just contain the Regal Salmon Fillets.
- Marinate for 1 hour spooning the marinade over the fillets now and again.
- To cook, remove the fillets from the marinade and place onto a hot oiled grill or barbeque for approximately 3-4 minutes each side (or cooked to your taste).
- To cook the vegetables, place the mushrooms and oil in a medium hot pan and cook two minutes. Pour in the oyster sauce and vegetable stock and stir together.
- When the sauce boils drop in the bok choy leaves and cook until just wilted.
- Serve underneath or alongside the Regal Salmon Fillets.
