Look for Fresh Salmon: Whole & Fillets in the deli section of your favourite supermarket.
Ingredients (Serves 6)
400g Regal salmon fillet, skinned and boned
Dressing
¼ cup reduced salt soy sauce
2 tablespoons lemon juice
1 tablespoon sesame oil
1 teaspoon caster sugar
1 spring onion, very finely chopped
1 tablespoon chopped coriander
Method
1. Slice the salmon across the grain as thinly as possible. This is best done with a sharp, very thin, flexible knife.
2. Arrange the slices in a single layer on a large platter or individual serving plates.
3. Whisk all the dressing ingredients together in a small bowl.
4. To serve, spoon the dressing over the salmon. Serve immediately.
