Regal Salmon Pastrami Rolls

Ingredients

Salmon Rolls

  • 1 medium telegraph cucumber peeled, halved, cored and cut into strips
  • 1 firm ripe avocado peeled, stoned and cut into slices
  • 1 red capsicum seeded and cut into strips
  • fresh coriander sprigs
  • 200g Regal Salmon Pastrami

Dipping Sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon sesame oil
  • 1 teaspoon sake (or sherry)

Method

Dipping Sauce:

  1. Combine these ingredients together and serve alongside the marinated salmon rolls.

Salmon Rolls:

  1. Lay out the Pastrami slices on a flat surface. If the Pastrami slices are very large, cut in half.
  2. Place a strip of cucumber, avocado, red capsicum and a sprig of coriander across each piece of Pastrami and roll up.
