Regal Salmon Loins with Potato Gratin and Green Beans

Ingredients

Potato Gratin

  • 2 medium potatoes, peeled
  • 2 cloves garlic, thinly sliced
  • salt and freshly ground black pepper
  • ¼ cup cream
  • 2 tablespoons milk
  • ¼ cup finely grated parmesan
  • 1 teaspoon butter
  • 1 teaspoon oil
  • 250 g packet Regal Salmon Fresh Cuts Salmon Loins
  • green beans to serve

Method

  1. Prepare the potato gratin first. Preheat the oven to 180˚C. Lightly grease a small gratin dish.
  2. Slice the potatoes very thinly. Arrange half of the potatoes in the dish and top with a few slices of garlic. Season with salt and freshly ground black pepper.
  3. Combine the cream and milk and pour half evenly over the potatoes. Sprinkle with half of the parmesan. Arrange the remaining potatoes in the dish and season with salt and pepper.  Pour over the remaining cream and milk mixture and sprinkle with the remaining parmesan. Dot with butter.
  4. Bake in the preheated oven for 45 minutes or until the potato is cooked through and the top is golden.
  5. Just before the potato is cooked, heat the oil in a frying pan over medium heat. Add the Regal Salmon Fresh Cuts Salmon Loins and cook for 1 to 2 minutes on each side or until the salmon is cooked to your liking.
  6. Serve the salmon with the potato gratin and steamed green beans.
