Regal Salmon Kebabs Mediterranean Style

Ingredients (Serves: 2 as a entree or 5 for dinner)
2 tablespoons olive oil
1 shallot finely chopped
4 slices prosciutto or bacon thinly sliced
4 large tomatoes skinned and seeded
rock salt and ground black pepper to taste
pinch sugar
1/2 cup tomato juice
1/4 cup extra virgin olive oil
1 pack Regal Salmon Kebabs (Seasoned)
400 grams linguini cooked
parmesan cheese

Method
1. Soften the onion in the olive oil over a low heat. Add the prosciutto and gently fry for a couple of minutes.
2. Chop the tomato finely and add it to the pan along with the seasonings and tomato juice.
3. Cook the sauce rapidly for 5 minutes and remove from the heat. Stir in the olive oil.
4. Grill the Regal Salmon Kebabs for approximately 5 - 7 minutes. Turn the kebabs during cooking.
5. Serve the kebabs with the linguini and spoon over the warm tomato and prosciutto sauce. Finish the top with a little shaved or grated parmesan cheese.
