Regal Salmon Fillets with Lemon, Red Onion and Capers

Ingredients (Serves 4)
4 x 200gm Regal Salmon Fillets
1 lemon thinly sliced
1 red onion sliced
2 teaspoons capers, rinsed and drained
2 tablespoons olive oil
freshly ground black pepper

Method
1.Preheat oven to 200C
2.Place each salmon fillet on a square of foil. Divide the lemon slices, red onion, capers, olive oil and pepper between each fillet. Wrap to form 4 individual parcels.
3.Cook in the oven for 10-12 minutes, or until cooked through.
4.Also a great BBQ recipe.
5.Serve with steamed green vegetables or salad of your choice
