Regal Salmon and Rice Noodle Salad

Ingredients

  • 200g rice noodles
  • 1 carrot cut into thin strips
  • 1 lebanese cucumber, cut into thin strips
  • 1/2 cup fresh coriander leaves
  • 1/4 cup fresh mint leaves
  • 300gm Regal Salmon Morsels, Chilli & Lime flavour
  • 1/2 cup roasted, unsalted peanuts

Dressing

  • 1 tablespoon lime juice
  • 2 teaspoons brown sugar
  • 1 teaspoon fish sauce
  • 1 teaspoon finely chopped red chilli OR
  • 1/2 teaspoon minced chilli\
  • 2 teaspoons finely chopped lemon grass

Method

  1. Combine dressing ingredients and set aside
  2. Cook the rice noodles in boiling water for 4 to 5 minutes or until tender, drain and rinse under cold water. Place into a large bowl and add carrot, cucmber, coriander and mint.
  3. Pour dressing over the noodle mixture, add salmon and gently toss.
  4. Serve garnished with peanuts.
