Regal Salmon with Mango Salsa

Ingredients

  • Salsa
  • 1 lrge or 425 gm mango, peeled and diced or canned mangoes, drained & sliced
  • 1/4 C chopped fresh coriander
  • 1/4 C finely chopped red onion
  • 1/4 C orange juice
  • 1 tsp orange zest
  • 2 tsp finely chopped red chilli or
  • 1 tsp miced red chilli
  • 1 clove garlic, crushed
  • 1 1/2 T olive oil
  • pinch freshly ground pepper
  • Salmon
  • 4 x 200gm Regal Salmon Fillets
  • 1T olive oil
  • Pinch freshly ground pepper
  • To Serve
  • 4 poppadoms

Method

Salsa

  1. Combine the salsa ingredients in a small bowl. Season with pepper and set aside.

Salmon

  1. Preheat the oven to 180C
  2. Heat an oven proof, non-stick frying pan over medium-high heat. Rub the salmon fillets with oil and season well with pepper. Place fillets into the frying pan, skin side up.
  3. Sear until brown and crisp, about 3 minutes. Turn the fillets over and bake in the oven until just cooked through, abour 5 - 10 minutes.
  4. Place each fillet on a poppadom and top with salsa.
