Ingredients (Serves 4)
Salsa
1 lrge or 425 gm mango, peeled and diced or canned mangoes, drained & sliced
1/4 C chopped fresh coriander
1/4 C finely chopped red onion
1/4 C orange juice
1 tsp orange zest
2 tsp finely chopped red chilli or
1 tsp miced red chilli
1 clove garlic, crushed
1 1/2 T olive oil
pinch freshly ground pepper
Salmon
4 x 200gm Regal Salmon Fillets
1T olive oil
Pinch freshly ground pepper
To Serve
4 poppadoms
Method
Salsa
1.Combine the salsa ingredients in a small bowl. Season with pepper and set aside.
Salmon
1.Preheat the oven to 180C
2.Heat an oven proof, non-stick frying pan over medium-high heat. Rub the salmon fillets with oil and season well with pepper. Place fillets into the frying pan, skin side up.
3.Sear until brown and crisp, about 3 minutes. Turn the fillets over and bake in the oven until just cooked through, abour 5 - 10 minutes.
4.Place each fillet on a poppadom and top with salsa.
