Regal Salmon with Ginger and Lime Sauce

Ingredients (Serves 4)
2 x 200gm Regal Salmon Fillets
2 tablespoons olive oil
Salt & freshly ground pepper

Sauce
1 tablespoon freshly grated root ginger
1 shallot, finely chopped
1/4 cup lime juice
3/4 cup cream
Salt & freshly ground black pepper

Method
1.To prepare the sauce, place all ingredients in a small saucepan. Simmer over medium hear for 4 to 5 minutes or until it has slightly thickened. Stir occassionally. Keep warm.
2.Heat an oven proof, non-stick frying pan over medium-high heat. Rub the salmon fillets with oil and season well with salt and pepper.
3.Place fillets into the frying pan, flesh side down and cook for 3 minutes or until golden. Carefully turn over adn grill the skin side for 3 to 4 minutes or until it is just cooked through.
4.Serve immediately with the sauce.
