Regal Lime, Coriander and Mint Salmon Skewers

Ingredients

  • 400g skinned and boned fresh Regal Salmon fillet, cut into cubes
  • 1 teaspoon olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons chopped coriander
  • 2 tablespoons chopped mint
  • 1 large red chilli, finely chopped
  • freshly ground black pepper
  • lime wedges to serve

Method

  1. Preheat a barbecue or chargrill pan to medium heat.
  2. Place the olive oil, lime juice, coriander, mint, chilli and pepper in a bowl. Add the salmon and mix gently to combine. Thread the salmon onto skewers.
  3. Cook the skewers on the preheated barbecue or chargrill pan for 2 minutes on each side or until just cooked through.
  4. Serve with mountain bread and a green salad. Garnish with lime wedges.
