Ingredients (Serves 4)
4 large Regal Salmon steaks
2 tablespoons Cajun spice mix
Salad
2 teaspoons small cucumbers, cut in half and sliced thinly
1 red pepper, thinly sliced
1 small red onion, thinly sliced
2 tablespoons coriander leaves
Dressing
1/4 cup lime juice
1/4 cup olive oil
2 tablespoons sweet chilli sauce
1 teaspoon small red chilli, chopped
1/2 cup garlic clove, crushed
Method
1.Sprinkle the spice mix over the salmon steaks. Cook the salmon over a preheated barbeque or under a preheated grill fro 3 to 4 minutes or until just cooked.
2.Combine the cucumber, red pepper and red onion in a bowl. Add the dressing and toss gently. Scatter the coriander leaves over the salad and serve immediately with the salmon steaks.
3.To prepare the dressing, combine all ingredients.
