Sachie’s Regal Salmon Sushi Cake

Are you struggling to roll your own sushi? Good news – you don’t need a sushi mat to make these delightful little cakes. You can use ramekins or be creative with muffin tins, cake tins or any other small containers to make different shapes.

100g Regal Cold Smoked Salmon Slices

3 cups cooked short- or medium-grain rice

2½ Tbsp sushi vinegar 

2 Tbsp sushi ginger, finely chopped

1 Tbsp black sesame seeds

Salmon roe or finely chopped capsicum, to garnish



Line a small muffin tin with plastic wrap, letting the plastic hang over the sides.

Place half a piece of smoked salmon inside each cup.

Mix cooked rice with sushi vinegar, ginger and sesame seeds.

Spoon rice on top of smoked salmon in the tin. Press gently and cover with plastic wrap to prevent drying out. Set aside for 5 minutes.

Turn muffin tin upside down to remove sushi cakes. Remove plastic wrap and garnish with salmon roe or capsicum.
