1 x 100g Regal Manuka Smoked Salmon
Rind ripened cheeses like brie or camembert
Relishes; pickled vegetables like baby turnips, beets, radishes or onions.
Lemon or lime wedges
For quick pickled vegetables
4 tbsp rice vinegar
1 tsp salt
1 tsp sugar
For a fresh and simple antipasto platter – assemble any of the following: 100g Regal Manuka Smoked Salmon; crudité such as cucumber, celery, tomatoes, radishes and olives; rind ripened cheeses like brie or camembert, crackers, breadsticks, chutneys, pickles or relishes; pickled vegetables like baby turnips, beets, radishes or onions.
For quick pickled vegetables, mix together rice vinegar with salt and sugar. Pour over vegetables coating well, then leave for 10-15 minutes to soak in, then serve.
Garnish with plenty of lemon or lime wedges.
