Pacific Style Regal Salmon Fillets

Ingredients (Serves: 4)
1 shallot finely sliced
1/4 teaspoon red curry paste
1/2 teaspoon ground cumin
1 400ml can coconut cream
fresh coriander leaves
1 tablespoon vegetable oil
1/4 teaspoon ground coriander
1 small red chilli seeded and chopped
1 fresh Regal Salmon Fillet cut into 4
1 cup wild rice cooked

Method
1. Saute the shallot and oil in pan over a low heart until soft.
2. Stir in the curry paste, coriander, cumin and red chilli. Pour in the coconut cream and combine well.
3. Do not boil the sauce. Place the Regal Salmon Fillet in the sauce and poach without boiling for approximately 10 minutes or cooked to your taste.
4. Serve the fillets on top of some wild rice with the sauce spooned over the top. Garnish with some fresh sprigs of coriander.
