Mexican Regal Salmon Steaks with Tomato Avocado Salsa

Ingredients

  • 4 Regal Salmon Steaks
  • 1 teaspoon grated lime zest
  • 1/4 cup lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon minced fresh jalapeno pepper

Tomato Avocado Salsa

  • 1 tomato, sliced skinned and diced
  • 1 ripe avocado peeled and diced
  • 2 tablespoons fresh lime juice
  • 1 finely diced red onion
  • 1 teaspoon fresh jalapeno pepper
  • 2 tablespoons chopped fresh coriander
  • salt

Method

  1. Place salmon steaks into a shallow dish. Mix together all ingredients and spoon over the salmon steaks. Marinate for approximately 30-60 minutes before cooking.
  2. Pre-heat BBQ or grill and place salmon steaks on medium heat for 4-5 minutes each side, continuing to baste with marinade.

Tomato Avocado Salsa

  1. Mix all ingredients together.
