Macadamia Dukkah-crusted Regal Salmon

4 x 150g skinned & boned fresh Regal salmon portions
oil spray
1/2 cup salted and roasted Macadamia nuts – roughly chopped
1 tsp ground cumin
½ tsp ground coriander
½ tsp  paprika
½ tsp black pepper

Method

  1. Preheat oven to 200°C
  2. Place Salmon fillets on baking paper on a baking tray lined with baking. spray Regal Salmon portion with a little oil spray. 
  3. Mix the chopped macadamias, cumin, coriander, paperika and pepper in a small bowl. Crust the top of each salmon fillet with the dukkah mixture. Bake in a preheated oven for 10mins or until thesalmon is just cooked through.
  4. Serve the salmon with a fresh green salad and boiled baby potatoes.
