Honey Mustard Regal Salmon Steaks with Tropical Salsa

Ingredients
2/3 cup clear runny honey
2 tablespoons wholegrain mustard
2 tablespoons lemon juice
4 Regal Salmon Steaks
wedges of lemon

Tropical Salsa
1 small pineapple, skinned, halved, cored and finely sliced
1/2 a fresh paw paw, seeded, skinned and diced (optional)
1 small red capsicum seeded and finely chopped
1 small red onion finely chopped
3 spring onions finely sliced
1/4 cup fresh mint
3 tablespoons lemon juice

Method
1.Combine the honey, grainy mustard and lemon juice.
2.Place the salmon in a shallow dish and baste the flesh with the honey mixture. Marinate for one hour.
3.Grill the steaks on a hot grill for two minutes each side or until cooked to your liking. Baste the steaks while they cook with a little marinade.

Salsa:
1.Combine all the ingredients for the salsa and spoon over the salmon steaks. Serve with sauted zucchini or a green salad on the side. If any marinade remains, spoon a little extra over the steaks.
2.Finish the dish with wedges of lemon.
