Geoff Scott's Fresh Regal Salmon with Creme Fraiche and Watermelon

Ingredients

  • 450g Fresh Regal Salmon (5mm diced)
  • 1 shallot finely diced
  • 1 tbsp chives sliced
  • NZ flakey Pacific sea salt
  • Freshly ground white pepper
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin NZ olive oil
  • 250g crème fraiche
  • 100g salmon roe
  • 2 cups watermelon 1cm diced (seeds removed)
  • 1 cup assorted baby leaves & herbs to decorate

Method

  1. Mix salmon, shallots, chives, salt, pepper, lemon juice & olive oil in a bowl.
  2. Arrange spoonfuls of salmon mix in rings – use cookie cutters or make
    rings with plastic bands cut & taped to size.
  3. Spoon crème fraiche on top. Place salmon roe on top.
  4. Decorate each plate with watermelon, baby leaves & herbs.
