Flash Roasted Regal Salmon with Mango Salsa

Serves 4-6

1/2 cup Thai sweet chilli sauce
2 tsp fish sauce
finely grated rind 1 lime or lemon
6 boneless skinless Regal Salmon fillets (or 6 salmon steaks)
1/4 cup fresh lime or lemon juice

Mango Salsa
2 peeled mangoes, finely diced
2 tbsp Thai sweet chilli sauce
3 tbsp lime juice
zest of 1 lime
1 red chilli deseeded and minced finely
2 tbsp chopped mint
salt and pepper
To serve: steamed rice and lightly cooked spinach or rocket

1. Mix soy with chilli sauce, lime rind and juice. Place salmon on a baking tray
lined with baking paper. Spread chilli sauce mixture over the salmon.
2. Chill in the fridge until ready to cook (this can be done an hour or two ahead).
3. Mix mango salsa ingredients together in a small bowl.
4. Preheat oven to 250˚C. Bake salmon 6-8 minutes until just cooked – the flesh
should give when pressed, but it should not be so cooked that the white of
cooked protein starts to leak out.

Serve the salmon with mango sauce, and accompany with steamed rice and lightly cooked greens e.g. bok choy or spinach.
