Derek The Chef's Seared Regal Marlborough Salmon

Ingredients

  • 800g Regal Salmon Fillet, skin on
  • 4 slices sour dough bread
  • 400g spinach
  • Olivado Extra Virgin Avocado Oil
  • 200ml Hollandaise Sauce

Method

  1. Grill the sour dough on both sides and place in center of plate.
  2. Wilt the spinach in boiling water, drain thoroughly and place on the sour dough.
  3. Bring a thick based pan up to temperature then add a little of the avocado oil. Sear the salmon fillet on both sides until just dark in the middle.
  4. Place the fillet on top of the spinach. Lap one end with the Hollandaise sauce then sprinkle a little of the Avocado oil over. Garnish with dill leaves
