Creamy Spaghettini with Regal Smoked Salmon

This super quick and easy pasta dish is a great example of how a little bit of a luxurious ingredient can go a long way.

Creamy Spaghettini with Regal Smoked Salmon

Ingredients

  • 100 g smoked salmon slices
  • Dried pasta for 4 people, I use around 300 g dried spaghettini or spaghetti
  • 200 g crème fraiche
  • 3 spring onions sliced
  • Juice and zest of a small lemon
  • Black pepper
  • Chopped parsley optional

Method

  1. Boil the pasta in salted water according to the packet directions. Drain reserving ¼ cup of the starchy water it was cooked in.
  2. Return the drained pasta to the pan and stir in the lemon juice and zest, spring onions and crème fraiche. Lastly fold in the starchy water and salmon shavings.
  3. Divide into bowls and top with a little cracked pepper and chopped parsley.
  4. Cooks tip: I use between 75 – 90 g dried pasta per serve.
