Regal Creamy Salmon Pies

Ingredients (Serves 4)
3 medium potatoes, chopped
4 tbsp butter
3 tbsp plain flour
2 cups milk
400g fresh Regal salmon fillet, skinned and diced
½ cup grated mild cheese, such as Colby or Gruyere,
plus a little extra for sprinkling
1 cup frozen peas, thawed

Method
Place the potatoes into a pan of cold water. Cover, bring to the boil and simmer for 10-15 minutes until tender. Drain, place back into the pan, season with salt and freshly ground black pepper and mash together with 1tbsp butter. Cover with plastic wrap to keep warm.

Meanwhile, melt remaining butter in a separate pan. Add the flour and cook over a low heat, stirring constantly for 1-2 minutes. Gradually add the milk, stirring until smooth. Cook until the sauce thickens, then add the salmon, cheese and peas and cook for 2 minutes.

Preheat the grill. Divide the salmon mixture among four ramekins or small oven-proof dishes, then spoon on the mashed potato. Sprinkle with remaining cheese, then grill for 5 minutes until golden and hot throughout.
