Ingredients
4 fresh Regal Salmon Steaks
Gremolata
3 tablespoons chopped parsley
1 garlic clove, crushed
1 finely grated lemon rind
Salad
200g green beans
4 medium tomatoes
1 red onion, finely sliced
1/4 cup black olives
2 tablespoons basil leaves
Dressing
1/2 cup olive oil
1/4 cup lemon juice
1 garlic clove, crushed
1 teaspoon brown sugar
Method
1.Cook the salmon steaks over a preheated barbeque or under a preheated grill for 3 to 4 minutes or until just cooked. While the steaks are cooking, prepare the gremolata. Combine the parsley, garlic and lemon rind in a small bowl. Set aside.
2.Prepare the salad – combine all the ingredients in a salad bowl. Add the dressing and toss gently.
3.Place the salmon steaks onto serving plates. Top with the gremolata and serve with the salad and boiled baby potatoes.
4.To prepare the dressing, combine all ingredients.
