Banana Bilini with Regal Salmon and Maple Syrup

Banana Bilini with Regal Salmon and Maple Syrup

Ingredients

  • 1/4 cup mashed bananas
  • 125 grams flour
  • 2 eggs
  • 2 1/2 teaspoons baking powder
  • 1 cup milk
  • 4 small bananas skinned and split lengthwise
  • 40 grams butter melted
  • 3/4 cup maple syrup
  • 2 tablespoons caster sugar
  • lemon wedges
  • 1 teaspoon grated lemon rind
  • 1 tablespoon lemon juice
  • 1 200 gram pack Regal Smoked Salmon SlicesĀ 

Method

  1. Place the mashed banana, eggs, milk, butter, caster sugar, lemon rind and lemon juice in a bowl and whisk together.
  2. Sift the flour and baking powder into a bowl and make a well in the centre. Gradually add the egg mixture beating to a smooth batter. Rest the batter for 20 minutes.
  3. To cook the bilini, heat a heavy bottom fry pan to a medium heat. Lightly grease the bottom with butter. Ladle 4 tablespoons of batter into the pan to make each bilini. Cook for 2 minutes or until the bilini forms bubbles and the underside is golden. Turn and cook the other side.
  4. Serve a bilini topped with slices of smoked salmon and banana halves, and drizzle with maple syrup. Serve a lemon wedge on the side.
