Assiette of Regal Fresh and Smoked Salmon

Ingredients

Tartare of Salmon 

  • 150g Regal Fresh Salmon Fillet
  • 150g Regal Cold Smoked Salmon Slices
  • 1/2 cup chives, finely sliced
  • 1/2 cup pure olive oil
  • pinch of seas salt
  • pinch of white pepper

Method

  1. Beat the sour cream and cream together to form soft peaks.
  2. Zest the lemon over the bowl to capture the aromatic oils and the zest.
  3. Add a squeeze of the lemon juice and season with salt and pepper to taste.
