April's Arabic Salad with Regal Wood Roasted Salmon

Ingredients

  • 1 Red onion, peeled & sliced into rings
  • ½cup Dukkah mix, found in supermarket deli’s
  • 3 Tomatoes, cut into large dice
  • 1 Telegraph cucumber, seeded & diced
  • ¼cup Flat leaf parsley, roughly chopped
  • ¼cup Mint, roughly chopped
  • 1pkt Regal Wood Roasted salmon
  • 1clove Garlic, crushed
  • ½Tbsp Balsamic vinegar
  • 30ml Olivado zest oil
  • 30ml Olivado avocado oil
  • handful Pita or Bagel crisps
  • 12 Small crisp cos lettuce leaves

Method

  1. In a mixing bowl, coat the red onion rings in dukkah
  2. In another mixing bowl, toss together the tomatoes, cucumber, parsley and mint
  3. Break the salmon up into pieces, fold through the salad with the garlic, balsamic vinegar, oils and crisps
  4. On a platter, lie out the cos lettuce and scatter over the salad. Garnish with the dukkah onion rings and serve
